Roasted Cauliflower Crunchies

1 head of cauliflower, chopped into bite-sized pieces (or bagged, pre-cut cauliflower)
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 tablespoon extra virgin olive oil
¼ cup pumpkin seeds
salt, to taste

Preheat oven to 400º. Toss all the ingredients together on a baking sheet. Roast for 25 – 30 minutes until browned and crispy.
