Salmon Apple Cabbage Salad
This is an awesome, protein-packed salad that you can prepare ahead of time and take to work or make on a busy weekday night. If you want to meal prep on the weekend so you have your lunches ready to go, here are a few tips:
- Mix all salad ingredients except the lettuce to avoid wilting (the cabbage will stay crunchy). Add the lettuce when you’re ready to eat.
- Dress only the portion of your salad that you’ll eat on the day of.

Salmon Apple Cabbage Salad
1 head of butter lettuce
1 lb. canned wild salmon
1 green apple, chopped
1 cup chopped purple cabbage
2 tablespoons hemp seeds
2 tablespoons sunflower seeds
Combine all ingredients in a large bowl.
Dressing
¼ cup fresh squeezed lemon juice
2 tablespoons apple cider vinegar
2/3 cup extra virgin olive oil
¼ cup cilantro, chopped
1 teaspoon pepper
sea salt
Whisk all ingredients together and season with salt.
Serves 4
