Creamy Bean Dip with Carrot and Celery Sticks

If you haven’t tried Aduki beans before, now’s your chance! This dip is super easy to prepare and makes a great snack that you can pack-n-take anywhere.
Creamy Bean Dip with Carrots and Celery Sticks
Ingredients
1 can Aduki beans
½ cup vegetable broth or water
1 tablespoon ghee
salt and pepper to taste
4 carrots, cut into sticks
4 celery stalks, cut into sticks
Instructions
- In a sauté pan, combine the beans (with their liquid), broth and ghee. Simmer for 20 minutes, stirring and mashing the beans as they cook. (You can also blend in a food processor, if you have one.) You are looking for a creamy texture.
- Season with salt and pepper and enjoy with fresh cut vegetables.
Serves 2.
