Creamy Bean Dip with Carrot and Celery Sticks

Adzuki Bean Dip with Veggies

If you haven’t tried Aduki beans before, now’s your chance! This dip is super easy to prepare and makes a great snack that you can pack-n-take anywhere.

Creamy Bean Dip with Carrots and Celery Sticks

Ingredients

1 can Aduki beans
½ cup vegetable broth or water
1 tablespoon ghee
salt and pepper to taste
4 carrots, cut into sticks
4 celery stalks, cut into sticks

Instructions

  1. In a sauté pan, combine the beans (with their liquid), broth and ghee. Simmer for 20 minutes, stirring and mashing the beans as they cook.  (You can also blend in a food processor, if you have one.) You are looking for a creamy texture.
  2. Season with salt and pepper and enjoy with fresh cut vegetables.

Serves 2.
