PCOS-Friendly Lunch: Chicken Curry Salad

Chicken Curry Salad

This chicken curry salad is a great make ahead meal that’s perfect for a take-to-work lunch.

Chicken Curry Salad

1 cup of cooked chicken, chopped (canned or rotisserie can work)
½ celery stalk, diced
¼ cucumber, diced
1 teaspoon curry powder
1 tablespoon sunflower seeds
1 tablespoon extra virgin olive oil
salt and pepper to taste

Mix all the ingredients together and serve in a lettuce wrap or on a bed of greens.

Serves 2.
