PCOS-Friendly Snack: Toasted Kale Chips

Kale chips are so easy to make and cheaper than buying store bought ones. They’re great alone as a snack or a replacement for unhealthy potato chips with your favorite sandwich.
Toasted Kale Chips
1 head of kale torn into large pieces (or pre-washed, bagged kale)
2 teaspoons extra virgin olive oil
1 teaspoon curry powder (or seasoning of your choice)
sea salt and pepper
Toss kale with olive oil and season with curry powder and sea salt. Bake for 8-10 minutes at 375º or until crispy. Careful not to burn.
